Pork Souvlaki Skewer Pita Wraps

Seriously good-tasting Pork Souvlaki wrapped inside pita flatbread along with Hummus, Tzatziki, Feta and tomatoes, cucumbers, peppers, red onion.

INGREDIENTS

For The Souvlaki:

1 kilogram / 2.2 lb Boneless Pork Roast

8-10 wooden skewers, soaked in water


For The Souvlaki Marinade:

1 lemon zested and juiced

1 tablespoon dried oregano

1 teaspoon dried thyme

1 garlic clove minced

2 tablespoons olive oil

Salt & Pepper


For The Wraps:

1 medium-sized tomato, chopped or a handful of Cherry tomatoes cut in half

1 small red onion, chopped

1 Red, Yellow or Orange Pepper, chopped

1 mini Cucumber or 1/4 of an English Cucumber

1/4 cup or so Feta Cheese

6-8 Pita flatbreads

Tzatziki and or Hummus


INSTRUCTIONS:

Start by cutting up Boneless Pork Roast into 1 inch bite sized pieces, place to the side for now. Heat up grill of griddle (whichever you have on hand). Also turn the oven to 350F.


In a medium sized bowl measure out the Souvlaki Marinade ingredients: zested lemon, lemon juice, oregano, thyme, garlic, olive oil and salt & pepper. Mix with a small whisk or spoon until combined. Add in the cut up Pork and mix until pork is coated nicely. Let marinade from 10-30 minutes. Once Pork has marinated for a bit thread the pork chunks onto the soaked wooden skewers, doing this until skewer is full but not to full! Leave a tiny bit of space between each piece of pork. Repeat this process until all the pork has been put onto the skewers. Place finished skewers onto a plate.

Now that the grill is nice and warm give it a quick spray of olive oil and then place the skewers on to the hot grill. Grill each side of the pork skewers for a few minutes until it is golden brown with slight grill marks. This should take 10-15 minutes. Once the skewers are done place them back on the plate and put in the oven for 10 or so minutes to finish the pork cooking (should be at an internal temperature of 145 F).

While Pork Skewers are finishing cooking cut up tomatoes, cucumber, pepper and feta cheese. Warm the pitas in the oven and set out the hummus and tzatziki (You can make these from scratch but you don't need to if you don't have the time! Store bought is fine too!) Remove the Souvlaki Pork Skewers and Pitas from the oven and serve immediately! Start with warm Pita, Hummus or Tzatziki, add in your vegetables, feta cheese and Pork removed from the skewer or course! And Enjoy! Potato Wedges also go great as a side with this meal!
