Fresh Eats-Bruschetta

The perfect Italian appetizer, that is oh so easy to make! Filled with fresh tomatoes, garlic, olive oil, white wine vinegar, basil and parsley! Great for parties and potlucks as you can make it ahead of time and it tastes just as good!


INGREDIENTS

For Bruschetta:

3-4 Tomatoes (Roma or whatever you have on hand) chopped with juices

3-4 cloves Garlic, pressed

2-3 tbsp Olive oil

2 tsp White wine vingear or Balsamic vinegar

1 tsp Basil (fresh or dried)

1 tbsp fresh Parsley, chopped

1/2 tsp Salt & Pepper


1-2 Baguettes, sliced

2-3 tbsp olive oil


INSTRUCTIONS

Combine listed ingredients for brushetta and stir! Let the mixture sit together for at least 5 minutes or so before serving to let flavors co-mingle.To make toast, simply slice up a baguette on the diagonal. Spread toasts evenly on a baking sheet. Pour a few tablespoons of olive oil in a small bowl. Then using a brush, lightly spread each toast with olive oil and broil for a few minutes. Be sure not to let them burn! They will toast quite quickly! To serve I simply set out the bowl of Brushetta and toast points and let people go crazy! I highly suggest picking up an extra baguette or two because they will go quickly!
